This is a bit on the spicy side, but totally worth it if you can take the heat.
You will need:
- 1 can black beans, rinsed and drained
- 1 zucchini, chopped
- 2 jalapenos, chopped
- 2 onions, chopped
- 1/2 tsp. chili flakes
- 1 cup frozen corn
- 4 cloves garlic, crushed
- g/f soft tortilla shells
- vegetable oil
- 1 cup Monterrey Jack cheese, shredded
- 1 cup rice
- 2 cups vegetable stock
- 1/2 tsp. Cayenne pepper
- 1 tbsp. south western seasoning
In another pan saute 1 onion, 2 cloves of garlic, chili flakes and 1 jalapeno. Add zucchini, black beans and corn.
Spoon black bean mixture into tortillas and top with cheese. Serve with rice.
